RoDante, Il Cuoco Errante is a chef, holds cooking lessons throughout Italy and… disdains vegans
In the varied and colorful world of Chefs, a character in his own right is RoDante, The Wandering Chef (born
Roberto Dante Vincenzi), Italy's first home chef. Active for over 40 years, trendsetter and
person with a cheerful and direct manner, remembers that in 2000 only his name appeared by typing "chef a
homicide” on Google.
Today he doesn't just cook, but also holds cooking lessons at home and although he was the cook
official for the Island of the Famous in the 2010 edition, he tends to shy away from stars and competitions, just as
from television programs dedicated to cooking lessons which according to him are very uneducational.
For RoDante, domicile is an accessory, as long as it allows him to technically express his ability:
he cooks everywhere, he is a land and sea chef, he coordinates banqueting and catering without asking too many people
limits on invitations but, above all, he strongly believes that his profession is not synonymous with the elite because a
an unforgettable meal – even just once – is everyone's right.
His is a thought made of "recipes and sensations". Many recipes are dogmatic for him, that is, mandatory:
because, according to RoDante, pushing creativity to dismantle a dish when it has already achieved its goal
apex? Sensations, on the other hand, are that baggage of perceptions with which he enters someone else's house to leave the
own sign. His cuisine is full of recipes born from the culture of geographies on the table, dedicated to
cycle of the seasons and enriched by simplicity.
Faced with changing times he has seen the type of requests change: from simple romantic dinners and/or
family events such as small birthdays have moved on to all types of events, including small weddings
household items for 12/15 people.
At the same time, faced with the growth in requests for vegetarian dishes, he responds positively, which
he is not for the increasing number of vegans to whom he declares: "I don't even take them into consideration...
